The Ultimate Gingerbread Recipe

Why Gingerbread?

Growing up I always appreciated Gingerbread cookies. Nothing symbolizes the holidays quite like Gingerbread in its many forms. However, you don’t have to be a child, even as an adult I really enjoy a good Gingerbread cookie, so long as the weather outside is chilly.

The recipe I’m about to share contains a decent amount of honey and wholemeal plain flour. Ginger is healthy in itself and the dough doesn’t contain refined sugar as “normal” cookies.



How to Make Gingerbread Cookies?

You need quality ingredients, good kitchen tools and devotion.

Gingerbread Recipe

Ingredients for the dough:
Butter/coconut butter 100g
Honey 70g (depending on the type and quality of the honey)
Plain white flour 150g
Wholemeal plain flour 100g
Bicarbonate of soda 0.5 tsp
Ginger (ground) 2tsp
Cinnamon (ground) 0.5tsp
Cardamon (ground) 0.5tsp

Place the butter and honey in a double boiler and heat gently until they have melted and dissolved. Stir until the mixture blends together, but do not boil. Take the boiler off the heat. Mix the flour, bicarbonate of soda and ginger, then add the butter-honey mixture and beat until smooth.

Place the dough on a baking sheet and roll out to 5mm thick. Cut out directly on the paper, leaving a 2cm gap between each. Save the cuttings to make more figures, or round ginger biscuits.

 Bake them at 375°F for 8-9 minutes or until lightly golden-brown. Leave on the tray for 10 minutes. It may seem that the top is still a bit raw, but let them rest and it will be solid after a few minutes.

You also may place the dough in the freezer until you are ready to use it.

Decorative Glaze

For the decorative glaze you need:
2 egg whites
10 dkg homemade powdered sugar (coconut and maple sugar)

Beat the egg whites until stiff while slightly adding the powdered sugar to it. Your glaze is ready to work with. Be creative! Even if you feel decoration isn’t your strong suit, don’t be afraid to use your imagination!

Time: less than 20 minutes
Baking temperature: 375°F
Serves: 12

Bake Christmas Cookies Gingerbread Recipe Children Health

Due to the honey, these cookies can’t be eaten immediately upon exiting the oven. Give them a couple of days, and over time they soften slightly. Although, there are tricks to soften them. E.g. wrap the cooled biscuits in a lightly damp kitchen towel and heat for 20 to 30 seconds.

This easy recipe for gingerbread cookie makes great Christmas presents or decorations – perfect for baking with children. Make things more fun with a variety of cutters.
