Tomato-Almond Salad
4 medium tomatoes -sliced
1 sweet onion -chopped
1/2 cup of almond -chopped
1/2 cup of baby spinach -chopped
2 tablespoons fresh parsley -chopped
2 tablespoons extra virgin olive oil
pinch of salt
Cucumber-Yogurt Salad
2 medium cucumbers -sliced
1 tablespoon fresh dill -chopped
1 tablespoon fresh parsley -chopped
1 cup of yoghurt (vegan if you would like)
pinch of salt
Bell Peppers Salad
4 bell peppers (1 red, 1 orange, 1 yellow, 1 green) -sliced
2 green onions -chopped
1/2 cup of fresh parsley -chopped
1 tablespoon sesame seed -toasted, ground
2 tablespoons extra virgin olive oil
pinch of salt
Avocado Salad
2 avocados -peeled, sliced
1 sweet onion -chopped
1 large tomato -sliced
1 green pepper -chopped
1/2 lime -juiced
1 tablespoon of olive oil
1/2 tablespoon of fresh cilantro -chopped
pinch of salt and pepper to taste
Rucola (Arugula) – Olive Salad
2 cups of rucola (arugula)
1 cup of cherry tomatos
1/2 cup of black olives -sliced
1 green onion -chopped
2 tablespoons extra virgin oil
pinch of salt
